| SHERBET OF LITCHIS |

Ingredients
- 1 kilogram of litchis (fresh air)
- 250 grams of sugar
- 1/2 liter of pineapple juice
- 1 gelatine sheet
- 1/4 liter of juice of lime or lemon
|

To peel the litchis and to cut them in two. To separate the bone. To put the gelatine in lukewarm water during 10 minutes and to drain it next. To warm part of the juice of lime (or lemon) and to dissolve the sugar and the gelatine. To do a purée with the litchis and to add the pineapple juice and the rest of the juice of lime or lemon. To spill the miscellany in a few glasses and to set to cool in the icebox. To adorn with a sheet of mint and a few petals of rose.
